Here is PT’s version of stuffed peppers...a classic American dish with a twist. Why wait for the peppers to bake in an oven and only get a small amount of the good stuff to fit in the pepper? With PT’s version, you get garlic flavored peppers sliced and ready to eat with a large helping of meat, rice and tomatoes.
INGREDIENTS
2- large bell peppers 1 green and 1 red (sliced)
1- pound of ground Turkey or Beef
1- cup of dry white rice (makes 2 cups cooked)
1- 12oz can of diced tomatoes w/ Italian herbs
1- tbsp of dried oregano
2- cloves of garlic, peeled and crushed
½- cup of ketchup
Hot sauce-(depends on how hot you like it!)
1- pinch of salt and fresh ground pepper
2- tbsp of extra virgin olive oil
METHOD
In a large skillet, brown 1 pound of Turkey or Beef then drain and set aside.
In a large skillet, add 2 tbsp of olive oil, crushed garlic, and sliced peppers. Cook on low to medium heat for 5-10 minutes stirring occasionally.
Add one 12 oz can of diced tomatoes and cook at medium heat for 5 minutes.
Add ½ cup of ketchup and mix, continue to cook on low to medium heat. (Add hot sauce here if you like)
Start to cook instant rice (aprox 10 min)
Add ground Turkey or Beef to crushed tomatoes and mix. Then add rice and mix well.
Cook on low heat for 5 minutes and add cooked peppers and enjoy.
Serves 4 or one very hungry person!
